Ο Διαβήτης
Ο σακχαρώδης διαβήτης είναι ασθένεια η οποία χαρακτηρίζεται από αύξηση της συγκέντρωσης του σακχάρου στο αίμα (υπεργλυκαιμία) και διαταραχή του μεταβολισμού της γλυκόζης, είτε ως αποτέλεσμα ελαττωμένης έκκρισης ινσουλίνης είτε λόγω ελάττωσης της ευαισθησίας των κυττάρων του σώματος στην ινσουλίνη.
Οι κύριοι τύποι σακχαρώδους διαβήτη είναι ο διαβήτης τύπου 1, ο διαβήτης τύπου 2 και ο διαβήτης της κύησης.
Ο σακχαρώδης διαβήτης μπορεί να προκαλέσει μια σειρά σοβαρών επιπλοκών όπως καρδιαγγειακή νόσο, χρόνια νεφρική ανεπάρκεια, βλάβες του αμφιβληστροειδούς, βλάβες των νεύρων κ.α.
Πρωτεύοντα ρόλο στη θεραπεία του σακχαρώδους διαβήτη παίζει η χορήγηση ινσουλίνης.
Η γλυκόζη και η ινσουλίνη
- Η γλυκόζη είναι το κυριότερο καύσιμο του οργανισμού
- Η γλυκόζη βρίσκεται σε οποιοδήποτε φαγητό περιέχει υδατάνθρακες
- Η γλυκόζη είναι απαραίτητη για τον οργανισμό μας & την καταναλώνουμε αμέσως όταν περπατάμε,τρέχουμε, ή σκεπτόμαστε
- Η γλυκόζη αποθηκεύεται στους μυείς ή στις λιποαποθήκες
- Η ινσουλίνη είναι μια ορμόνη που παράγεται στο πάγκρεας
- Η ινσουλίνη βοηθά στο μεταβολισμό των υδατανθράκων και μεταφέρει τη γλυκόζη στο αίμα
- Τα άτομα που πάσχουν από διαβήτη αδυνατούν να παράγουν ινσουλίνη
Ο γλυκαιμικός δείκτης
- Ο γλυκαιμικός δείκτης των τροφών είναι ένας αριθμός (στην κλίμακα 0-100) που κατατάσσει τα διάφορα τρόφιμα ανάλογα με το πόσο γρήγορα ανεβάζουν τη γλυκόζη του αίματος (το «ζάχαρο» του αίματος όπως λέγεται στην καθημερινή γλώσσα). Σύμφωνα με αυτόν τον ορισμό, ο γλυκαιμικός δείκτης δείχνει ουσιαστικά πόσο γρήγορα γίνεται η πέψη ενός τροφίμου.
- Όταν καταναλώνουμε φαγητό με χαμηλό γλυκαιμικό δείκτη, η γλυκόζη απελευθερώνεται αργά στο αίμα και ο οργανισμός έχει χρόνο να αντιδρασει και να τη χρησιμοποιήσει εκεί όπου χρειάζεται.
- Όταν καταναλώνουμε τροφές με αυξημένο γλυκαιμικό δείκτη, η γλυκόζη απελευθερώνεται απότομα και έτσι αποθηκεύεται στα λιποκύτταρα.
Εμείς πώς μπορούμε να καταλάβουμε ποιες τροφές βοηθούν τον οργανισμό μας; Στην πραγματικότητα υπάρχουν 6 βασικά στοιχεία που προσδιορίζουν το γλυκαιμικό δείκτη μιας τροφής:
- Περιέχει υδατάνθρακες;
- Πόσο άμυλο περιέχει και ποιας μορφής;
- Πόσες φυτικές ίνες περιέχει;
- Τι είδους σάκχαρα περιλαμβάνει;
- Περιέχει λίπος; - το « παράδοξο » με την σοκολάτα
- Πόσο όξινο είναι;
Με τις ερωτήσεις αυτές αναγνωρίζουμε ποιες τροφές πρέπει να αποφεύγουμε και ποιες «ξεκουράζουν» τον οργανισμό μας, ώστε να τις εντάξουμε στην καθημερινή διατροφή μας.
Γλυκαιμικός δείκτης ανά διατροφική ομάδα
- ΥΔΑΤΑΝΘΡΑΚΕΣ
- Υψηλό: άσπρο ψωμί, νούντλς ρυζιού, πατάτες, ρύζι, γλυκά,μπισκότα
- Μέτριο: bran-flakes, πατατάκια , μπασμάτι, καστανό ρύζι, μπάρες, παγωτό
- Χαμηλό: κριθαρένιο ψωμί, παξιμάδι, ψωμί σικάλεως, βρώμη, γλυκοπατάτα
- ΟΣΠΡΙΑ
- Υψηλό: κουκιά
- Μέτριο: ρεβίθια μαυρομάτικα, φακές, φασόλια, φάβα
- ΦΡΟΥΤΑ
- Υψηλό: καρπούζι, μπανάνα, σύκα, χουρμάδες, μάνγκο, σταφύλι μαύρο
- Χαμηλό: μήλο, ακτινίδιο, κεράσια ,γκρέιπφρουτ, φράουλες, σταφύλι λευκό, αβοκάντο, ροδάκινο, αχλάδι, δαμάσκηνα, ντομάτα
- ΛΑΧΑΝΙΚΑ
- Υψηλό: κολοκύθα, παντζάρια
- Χαμηλό: κολοκυθάκια ,αγκινάρα, σπαράγγια, μελιτζάνα, μπρόκολο, καρότα, λάχανο, κουνουπίδι, λαχανάκια Βρυξελλών, αγγούρι, αντίδια
